One pan balsamic chicken with veggies

Ingredients :

*Chicken breast ( cut in half )
*Carrots ( cut into skinny sticks )
*Red onion ( diced )
*Mushrooms ( halved if large)
*Other veggies if needed 
Balsamic sauce:
*Balsamic vinegar ( 1/3 cup )
*Olive oil ( 1/4 cup )
*Garlic cloves ( finely minced )
*Basil ( finely chopped + additional for topping )
*Thyme 
*Salt
*Black pepper
( 2/3 balsamic sauce for marinate chicken, 1/3 for veggies )


Instructions :

** Marinate chicken breast with balsamic sauce in Zip-lock bag. ( set in fridge as long as needed )

  1.  Pre-heat oven 400 degree Fahrenheit. Line a baking sheet with parchment paper if needed.
  2. Place veggies on the sheet pan. Pour remaining balsamic sauce over veggies and toss to coat. Move veggies around the side.
  3. Remove chicken from bag. Place chicken on the middle of sheet pan.
  4. Transfer pan to the oven and bake 20-30 minutes. Use a meat thermometer to check chicken if reaches 150-160 degree Fahrenheit.
